Vankaya Chintakaya Roti Pachadi (Brinjal / Egg Plant Raw Tamarind Chutney)



Ingredients :
1. Brinjal                 : 3 medium sized
2. Raw tamarind.    : 7
3. Ripe red chillies   : 4
4. Oil                       : 1/2 tsp
5. Salt                     : needed
6. Turmeric             : pinch
7. Ground nuts       : 1 tbsp
8. Methi                  : 1 tbsp
9. Dhaniya              : 1/2 tsp
10. Urad dal           : 1/4 tsp
11. Chenna dal      : 1/4 tsp

For seasoning :
1. Oil                       : 2 tsp
2. Dry red chillies     : 2
3. Urad dal              : 1/2 tsp
4. Mustard              : 1/4 tsp
5. Methi                  : 1/4 tsp
6. Hing                   : pinch
7. Curry leaves       : 5

Procedure :
1. Apply oil to the raw Brinjal's and roast them on medium flame till they become soft.
2. Mean while, on a dry pan fry ground nuts, methi, dhaniya, urad dal, chenna dal and fry them till 
    dal's  turn red .
3. Grind dal's to a fine powder and keep it aside.
4. In a grinder,grind raw tamarind, ripe red chillies add turmeric, salt and mix well (this tamarind,ripe red       
     Chilly paste can be stored and used with other combinations also).
5. Now,remove the skin of the Brinjal's and mash them.
6. Now grind mashed brinjal, dal's powder, tamarind chilly paste and grind well.
7. Heat oil in a pan, fry all the seasoning items and mix with the grounded mixture.
8. Mix hand full of fresh coriander leaves to the prepared chutney. 
Serve with rice and dal !!
