Vankaya Perugu Pachadi
Ingredients :
1. Brinjal : 6 no's2. Fresh Curd : 250 ml
3. Coriander : As Needed
4. Salt : To Taste
5. Turmeric : Pinch
For Seasoning :
1. Oil : 1 tbsp2. Red Chillies : 2 no's
3. Urad Dal : 1/2 tbsp
4. Mustard : 1/4 tbsp
5. Jeera : 1/4 tbsp
6. Hing : Pinch
7. Curry Leaves : 7 no's
8. Green chillies pieces : 1 tbsp
9. Ginger pieces : 1 tbsp
Procedure :
1. Roast Brinjals on a stove till they cook inside.
2. Remove of the skin of Brinjal's and mash them by adding Curd.
3. Add Turmeric,Salt and Fresh Coriander leaves to this mixture.
4. Heat oil in a pan and add all the seasoning ingredients one by one and fry them.
5. Add this seasoning to the mixture and mix well.
