1. Cucumber : 1 big
2. Green chillies : 2 no
3. Tomato : 1 big ( chopped)
4. Red chillies : 4 no
5. Urad dal : 1 tbsp
6. Chenna dal : 1 tbsp
7. Mustard : 1/2 tbsp
8. Methi : 1/2 tbsp
9. Jeera : 1/4 tsp
10. Oil : 1 tbsp
11. Hing : pinch
12. Salt : to taste
13. Turmeric : pinch
14. Groundnuts : 3 tbsp
For seasoning :
1. Oil : 2 tsps
2. Urad dal : 1 1/2 tsp
3. Mustard : 1/2 tsp
4. Methi : 1/4 tsp
5. Jeera : 1/4 tsp
6. Red chillies : 2 no's
7. Curry leaves : 6 no's
8. Hing : pinch
Procedure :
1. Apply oil on the outer layer of the cucumber and roast them on medium flame. Remove skin and keep it aside.
2. Heat oil in a pan, add urad dal, chenna dal, mustard, methi, jeera, hing, groundnuts and fry till they turn red. In the same pan sauté tomatoes for 2 mins.
3. Grind the fried dal and roasted cucumber and tomatoes to a coarse paste, add salt and mix well.
4. Heat oil in a pan. Fry all the seasoning ingredients till they turn red.
5. Add seasoning to the grounded mixture and mix well.
6. Garnish with fresh coriander leaves.
