Gongura Roti Pachadi (Red Sorrel Leaves Chutney)

Gongura Roti Pachadi 

1. Fresh gongura leaves : 4 big bunches
2. Dry red chillies          : 7-8
3. Methi                        : 2 tbsp
4. Urad dal                    : 2 tbsp
5. Chena dal                  : 1 tbsp
6. Oil                             :  4 tbsp
7. Salt                            : to taste

Seasoning :
1. Oil                           : 3 tbsp
2. Hing                        : 1 pinch

Procedure :
1. Separate the gongura leaves from the stalks, clean and leave them in an open cool and dry place for 1 day.
2. Heat 2-3 tbsp oil in a thick bottomed vessel.Add the leaves and fry them till rawness disappears and it becomes soft. Leave it aside to cool.
3. In the same vessel add 1 tbsp oil and add methi seeds and fry till light brown and then add urad dal, channa dal, and dry red chillies and fry stirring constantly till light brown,remove and cool.
4. Grind above ingredients after adding salt.
5. Now heat 3 tbsp of oil in a pan to heat hing a.k.a asafetida (inguva nune in Telugu). Mix the hing oil with gongura mixture.

The famous Andhra Gongura pachadi is ready. Help yourself with hot rice and ghee.
