Vankaya Tomato Dosakaya Mukkalu Roti Pachadi (Brinjal, Tomato, Cucumber Chutney)

Ingredients :

1. Brinjal(small)          : 3 no's
2. Tomato                 : 1 big
3. Cucumber             : 1 big
4. Chillies                  :  2 no's
5. Oil                         : 1 tbsp
6. Salt                       : 1 tsp
7. Turmeric               :  pinch
8. Coriander leaves   : little

For Seasoning :

1. Oil                       : 2 tsp s
2. Urad dal              : 1 1/2 tsp
3. Mustard              :  1/2 tsp
4. Methi                  :  1/4 tsp
5. Jeera                  :  1/4 tsp
6. Red chillies         :  2 no's
7. Curry leaves       :  6 no's
8. Hing                   : pinch

Procedure :

1. Chop brinjal,tomato,chillies into medium size pieces.
2. Peel cucumber and cut it into small pieces.
3. Heat oil in a pan and fry brinjal,tomato and chilly pieces and close with a lid for 2 mins.
4. Open the lid, add salt, turmeric. Keep the lid closed for 2 more mins.
5. Grind the fried vegetable mixture and add cucumber pieces.
6. In the same pan ,take some more oil and fry all the seasoning ingredients.
7. Add this seasoning to the mixture prepared before ,add coriander leafs and garnish well.

Vankaya Tomato Dosakaya Pachadi is ready!!!
