Mamidikaya Koru Uragaya (Grated Mango Pickle)



Ingredients :

1.  Raw mango                   : 1 large
2. Chili powder                    :  tsps
3. Salt                                 :to taste
4. Turmeric                         :  1/4 tsp
5. Oil                                   :1cup
6. Mustard seeds               : 1/2 tsp
7. Fenugreek seeds            : 1/2 tsp
8. Hing                               : 1/2 tsp

Procedure :
 1. Grate raw mango and keep aside.
 2. Add chili powder,haldi and salt to it and mix well.
 3. In a pan dry roast fenugreek and mustard seeds and grind them to a fine powder.
 4. Mix this grounded powder to the grated mango mix and mix it well. 
 5. now, in a pan  heat  oil and add mustard seeds, fenugreek seeds, hing.
 6. Fry for a minute and add this seasoning to to the mixed pickle.
 7. Leave this for a day in an air tight container.
 8. Can be used from the 2nd day with hot rice, dosa, idly etc.

Can be stored for 1 month.
