Vakkaya Dosakaya Roti Pachadi (Carissa Spinarum and Cucumber Chutney)





Ingredients :
1. Vakkaya (deseeded)          : 1 cup
2. Cucumber                         : 1 cup 
3. Urad dal                            : 1 tbsp
4. Methi                                 : 1/2 tbsp
5. Chenna dal                        : 1/2 tbsp
6. Mustard                             : 1/4 tbsp
7. Jeera                           : 1/4 tbsp
8. Fenugreek                  : 1/4 tbsp
9. Red chillies                :  4 no's
10. Salt                           : To Taste
11. Turmeric.                 : pinch

For Seasoning:
1. Oil                : 1/2 tbsp
2. Mustard       : 1/8 tbsp
3. Urad dal       : 1 tbsp
4. Red chillies.  : 2 no's
5. Curry leaves : 7

Procedure:
1. Heat oil in a pan, then add urad dal, chenna dal, fenugreek, mustard, jeera and red chillies and fry till they turn reddish brown.
2. Again heat 1/2 tsp of oil in a pan and sauté  vakkaya pieces on medium 
    Flame for 3 min and cool.
3. Chop cucumber to fine pieces and keep aside.
4. Now, grind fried dals and cooked vakkaya pieces together,addsalt,turmeric and grind again to a fine paste
5. Add chopped cucumber pieces to the grounded mixture and mix well and transfer it to a bowl.
6. Heat oil add mustard, urad dal red chillies, curry leaves and fry them.
5. Add this seasoning to the grounded chutney and mix well.
